Wet Ingredients
- 2 large Eggs
- 2 tbsp Olive oil (divided: 1 tbsp + 2 tbsp, plus more if needed)

Instructions
- Mix the base: In a large bowl, combine the shredded mozzarella, grated parmesan, blanched almond flour, eggs, Italian seasoning, garlic powder, onion powder, sea salt, black pepper, and 1 tablespoon of olive oil. Stir thoroughly until all ingredients are well incorporated.
- Add chicken and combine: Add the ground chicken to the mixture and gently mix just until everything is combined. Be careful not to overmix to keep the patties tender.
- Form patties: Divide the mixture into 16 small patties about 3/8 inch thick. Place them on a cutting board lined with parchment paper, then cut the paper around each patty to create squares. This makes transferring easier.
- Heat skillet and cook: Heat 2 tablespoons of olive oil in a large nonstick skillet over medium heat for approximately 2 minutes until shimmering. Add the patties in a single layer using the parchment squares to lift them. Flip the pan carefully, peel off the paper, and fry the patties for 3-4 minutes per side until golden brown and cooked through.
- Repeat cooking: Cook the remaining patties in batches, using an additional tablespoon of olive oil if needed. Ensure each batch is cooked thoroughly and browned evenly.
- Rest and serve: Allow the cooked patties to rest for 5 to 10 minutes before serving to let juices redistribute for maximum juiciness.
Notes
- Do not overmix the chicken mixture to keep the patties tender and juicy.
- Using parchment paper for shaping helps keep the patties intact and makes flipping easier.
- Adjust salt to taste as per preference.
- Add extra olive oil if your skillet gets dry during cooking to prevent sticking.
