Potatoes

Instructions

  1. Boil the potatoes: Add the potatoes to a large pot and cover them with water. Season the water generously with about 1 tablespoon of kosher salt. Bring to a boil over high heat, then reduce to medium and cook uncovered for 15 to 20 minutes or until the potatoes are fork tender. Larger potatoes may need additional time. Drain the potatoes and let them cool for 5 minutes.
  2. Preheat and prepare baking sheet: Preheat your oven to 425°F (220°C). Brush a large baking sheet evenly with 1 tablespoon of olive oil to prevent sticking and help crisp the potatoes.
  3. Smash the potatoes: Place the cooled potatoes on the greased baking sheet. Using the bottom of a jar or glass, a fork, or a potato masher, gently press down on each potato until it is smashed to about 1/2-inch thickness but still holds together as one piece.
  4. Season and oil: Drizzle or brush the smashed potatoes evenly with the remaining 1 tablespoon olive oil and the 2 tablespoons melted butter. Season generously with kosher salt and black pepper to taste.
