Ingredients
For the Roast
- 1 medium onion (chopped), red onion recommended but yellow or sweet onion works
- 2 ½ pounds rump roast
- 1 can French onion condensed soup (10.5 oz)
- 1 can beef broth (10.5 oz)
For the French Dip Sandwich
- 4 hoagie buns
- 8 provolone cheese slices
Instructions
- Prepare the slow cooker: Place the chopped onions into the slow cooker as a base layer.
- Position the roast: Unpack the rump roast, pat it dry with a paper towel to remove excess moisture, then place it on top of the onions in the slow cooker.
- Add liquids: Pour the French onion condensed soup and beef broth evenly over the roast, covering it well to ensure flavor infusion.
- Slow cook the roast: Cover the slow cooker and cook on low heat for 6 hours to allow the meat to become tender and infused with flavors.
- Slice the roast: Carefully remove the roast from the slow cooker and slice it into thin pieces around ⅛ to ¼ inch thick.
- Finish cooking: Place the sliced roast back into the slow cooker and continue cooking on low for an additional 2 hours to absorb more juices.
- Prepare the hoagies: Cut the hoagie buns lengthwise. Optional: crisp them in the oven or air fryer at 400°F (204°C) for about 4 minutes for extra texture.
- Assemble sandwiches: Place 2 slices of provolone cheese inside each hoagie bun, then fill with 4 to 5 slices of the cooked roast, adjusting based on preferred sandwich fullness and slice thickness.
- Serve with au jus: Scoop some of the cooking sauce from the slow cooker into serving bowls to use as au jus for dipping the sandwiches.
- Enjoy: Serve the sandwiches hot alongside the au jus and enjoy a flavorful, tender French dip meal.

- You can crisp the hoagie buns in an oven or air fryer for added texture.
