- Make the Honey Mustard Sauce: In a separate bowl, whisk together the honey, Dijon mustard, minced garlic, and melted butter until the mixture is smooth and well combined. This will be the sauce that coats the chicken.
- Add Sauce and Cook: Pour the honey mustard sauce over the seasoned chicken in the crock pot, making sure each piece is well coated. Cover with the lid and cook on LOW for approximately 3 hours, or until the chicken reaches an internal temperature of 165°F. Checking around 2 hours is recommended for optimal tenderness.
- Incorporate Cream into Sauce: About 30 minutes before serving, add the heavy cream directly into the crock pot. Stir gently to incorporate the cream fully into the sauce, enriching its texture and flavor.
- Thicken the Sauce (Optional): If a thicker sauce is desired, whisk together the cornstarch and cold water in a small bowl until smooth. Stir this slurry into the crock pot and continue cooking on a warm or low setting for up to 30 minutes, or until the sauce reaches your preferred thickness.
- Serve: Once the chicken is cooked and the sauce is thickened to your liking, shred or pull the chicken into large chunks, mix gently, and serve hot. This dish pairs excellently with mashed potatoes, rice, or steamed vegetables.
