Ingredients
Vegetables & Herbs
- 1 cucumber (cut into 1/2 inch slices, approximately 16 slices)
- 1 spring onion (finely minced)
- 1 tablespoon fresh chopped chives
Dairy & Seafood
- 4 oz smoked salmon (cut into small pieces)
- 1/2 cup cream cheese
Others
- 1 teaspoon lemon juice, plus extra for drizzling
- 1 teaspoon lemon zest
- 1/2 teaspoon black pepper, plus extra for sprinkling
Instructions
- Prepare the cream cheese mixture: In a small bowl, combine the cream cheese, finely minced spring onion, chopped fresh chives, lemon juice, lemon zest, and black pepper. Stir well until all ingredients are thoroughly blended. Set this mixture aside to allow the flavors to meld.
- Prepare cucumber slices: Pat dry the cucumber slices with a paper towel to remove excess moisture. Lay the slices out neatly on a large plate or serving tray to prepare for assembling.
- Assemble the bites: Spread a small spoonful of the cream cheese mixture evenly over each cucumber slice. Then, top each slice with a small piece of smoked salmon, ensuring an even distribution for balanced flavor in every bite.
- Garnish and serve: Lightly sprinkle extra cracked black pepper over the assembled bites. Optionally, garnish with additional chopped chives and drizzle a little fresh lemon juice on top to add brightness. Serve these cucumber smoked salmon bites chilled for the best refreshing taste.
Notes
- For added crunch, you can lightly toast the cucumber slices before assembling but this is optional.
- If you prefer a dairy-free version, substitute cream cheese with a vegan cream cheese alternative.
- These bites are best served fresh but can be stored covered in the refrigerator for up to 4 hours before serving.
- You can add a small dollop of dill or capers on top for extra flavor complexity if desired.
