Eggs and Vinegar
- 1 dozen large eggs
- 2 tablespoons white vinegar
Spread Mixture
- 1 cup mayonnaise
- 1 tablespoon yellow mustard (add more if you like)
- Kosher salt, to taste
- Freshly ground black pepper, to taste

Instructions
- Boil the Eggs: In a large saucepan, place the dozen eggs and cover them with water. Add the 2 tablespoons of white vinegar and bring the water to a rapid boil. Once boiling, cover the saucepan, remove it from heat, and let the eggs stand covered for 15 minutes to finish cooking gently.
- Cool and Peel: Drain the hot water and rinse the eggs under cold running water. Shake the pan vigorously to crack the shells all around, then let the eggs sit in the cold water to cool completely, making them easier to peel. Once cooled, peel the eggs carefully.
- Prepare the Spread Base: Halve the peeled eggs lengthwise. Coarsely chop half of the egg whites and set them aside in a large bowl. Add the remaining egg whites and all of the yolks to a food processor. Add the mayonnaise and yellow mustard, then process until the mixture is smooth and creamy.
- Combine and Season: Transfer the smooth yolk mixture into the bowl with the chopped egg whites. Stir together gently to combine. Season the spread with kosher salt and freshly ground black pepper to taste.
- Serve: Spoon the deviled egg spread into a serving bowl. Dust the top lightly with paprika for both color and a subtle smoky flavor. Serve immediately alongside toasted bread, baguettes, or your favorite crackers for dipping.
Notes
- For best flavor, use fresh eggs but not the very freshest as they can be harder to peel.
- You can adjust the amount of mustard to your taste for more or less tanginess.
- The vinegar helps with peeling the eggs and adds a subtle acid note to the spread.
- Try adding chopped fresh herbs like chives or dill for a fresh twist.
- Store any leftover spread in an airtight container in the refrigerator for up to 3 days.
