Ingredients

Potatoes

Instructions

  1. Prepare Potatoes: Peel the potatoes and cut them into medium-sized chunks to ensure even cooking.
  2. Boil Potatoes: Place the chunks in a large pot, cover with water, and bring to a boil. Cook until the potatoes are very soft, about 10-15 minutes.
  3. Preheat Oven: While potatoes boil, preheat your oven to 375°F and line two baking sheets with parchment paper.
  4. Drain and Rice Potatoes: Drain the cooked potatoes and pass them through a potato ricer. If you don’t have a ricer, mash thoroughly until very smooth.
  5. Add Butter and Cream: Stir in 4 tablespoons of butter until melted, then mix in the whipping cream, sea salt, and ground pepper. Taste and adjust seasoning.
  6. Incorporate Egg Yolks: When the potato mixture has cooled slightly, beat in the four egg yolks until well combined.
  7. Pipe the Potatoes: Transfer the mixture to a pastry bag fitted with a large star tip. Pipe swirls about 3 inches in diameter on the prepared baking sheets.
  8. Brush with Butter: Melt the remaining 2 tablespoons of butter and gently brush over the piped potatoes to promote browning.
