- Prepare muffin tins: Spray two standard-size muffin tins with non-stick spray to prevent sticking. Set them aside for later use.
- Melt white chocolate: Microwave white chocolate chips in a large, uncovered, microwave-safe bowl on medium-high power for 1 minute. Stir until smooth, then continue microwaving in additional 10- to 15-second intervals, stirring each time, until fully melted but not overheated.
- Mix ingredients: Stir in powdered sugar and creamy peanut butter until the mixture is well blended and smooth. Gently fold in the chow mein noodles ensuring all pieces are coated evenly with the chocolate-peanut butter mixture.
- Form haystacks: Using a rounded tablespoon, drop spoonfuls of the mixture into the prepared muffin tins. Press down gently in the center to create a shallow ‘nest’ shape.
- Add mini eggs: Place three Cadbury Easter Candy Coated Mini Eggs in the center of each nest to complete the look and add festive flavor.
- Chill and set: Refrigerate the haystacks for about 20 minutes until they are fully hardened and easy to remove.
- Serve and store: Pop the haystacks out of the muffin tins carefully. Serve immediately or store in an airtight container for up to one week to maintain freshness.
