Instructions

  1. Prepare the Lemon Garlic Aioli: In a small bowl, combine Greek yogurt, extra virgin olive oil, lemon juice, garlic powder, salt, and black pepper. Whisk everything together until smooth and creamy, then refrigerate to let the flavors meld while you prepare the patties.
  2. Mash the Chickpeas: Using a food processor or potato masher, thoroughly mash the drained and rinsed chickpeas until mostly broken down, leaving a few chunks for texture.
  3. Mix Patty Ingredients: In a large bowl, combine the mashed chickpeas, breadcrumbs, diced white onion, cumin, turmeric, garlic powder, onion powder, and egg. Mix well with a spatula or your hands until the mixture is fully combined and holds together.
  4. Form Patties: Divide the mixture and shape it into 4 to 6 patties, each about 2-3 inches wide, pressing them firmly so they don’t fall apart during cooking.
