These Easy Chocolate Molten Lava Cakes are rich, decadent, and filled with a silky gooey chocolate center. Made with just 7 simple ingredients, this dessert is ready in under 30 minutes, perfect for an impressive treat or a romantic Valentine’s Day dessert.

  • Total Time: 22 minutes
  • Yield: 4 servings

Ingredients

Chocolate and Butter

  • 4 oz bittersweet chocolate
  • 4 oz butter

Wet Ingredients

  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1/2 cup sugar
  • 2 tablespoons flour
  • 1/2 teaspoon instant coffee or espresso powder (optional)

Instructions

  1. Prepare Ramekins: Preheat your oven to 400°F (200°C). Generously butter and dust four 4-ounce ramekins with cocoa powder or sugar to prevent sticking. Set them aside while you prepare the batter.
  2. Melt Chocolate and Butter: In a medium microwave-safe bowl, combine the bittersweet chocolate and butter. Melt them together in 30-second increments, stirring in between until smooth and fully combined.
  3. Mix Eggs and Sugar: In a separate large bowl, whisk together the large eggs and sugar until the mixture is pale and fluffy, indicating it’s well aerated.
  4. Combine Ingredients: Gradually whisk the melted chocolate and butter mixture into the egg and sugar mixture. Then, fold in the flour, vanilla extract, and optional instant coffee or espresso powder until just combined into a smooth batter.
  5. Fill Ramekins and Bake: Divide the batter evenly among the prepared ramekins. Place the ramekins on a baking sheet and bake in the preheated oven for 10-12 minutes, or until the edges are set and beginning to pull away from the sides while the center still jiggles slightly.
  6. Serve: Remove from the oven and serve immediately. These molten lava cakes are best enjoyed warm, ideally paired with a scoop of ice cream or fresh berries for contrast.

Notes

  • For best results, serve the cakes immediately after baking to enjoy the molten chocolate center at its gooey best.
  • If you don’t have ramekins, small oven-safe dishes can be substituted.
  • The optional espresso powder enhances the chocolate flavor but can be omitted if preferred.
  • Dusting ramekins with cocoa powder instead of flour helps preserve the rich chocolate taste.
  • You can prepare the batter ahead of time and refrigerate it for a few hours before baking; just add a minute or two to the baking time.
