Filipino Pancit is a classic stir-fried noodle dish from the Philippines, featuring tender shredded chicken, crisp vegetables, and savory soy and oyster sauce. This quick and easy recipe combines rice noodles with sautéed onion, garlic, carrot, cabbage, and snow peas, creating a vibrant and flavorful meal that is perfect for any occasion.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

Noodles

  • 8 ounces rice noodles

Vegetables & Protein

  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1 medium carrot, julienned
  • ½ small cabbage, shredded
  • ½ cup snow peas, trimmed
  • 1 cup cooked chicken, shredded

Sauces & Seasonings

  • 2 tablespoons vegetable oil
  • ¼ cup soy sauce (low sodium)
  • 2 tablespoons oyster sauce
  • ½ teaspoon ground black pepper
  • 2 cups chicken broth (low sodium or no sodium added)

Garnish & Serving

  • ½ lemon, sliced (for serving)
  • Fresh cilantro or green onions, chopped (for garnish)

Instructions

  1. Soak the Noodles: Place the rice noodles in a large bowl and cover them with warm water. Let them soak for about 10 minutes or until softened. Drain and set aside.
  2. Sauté Aromatics: Heat the vegetable oil in a large wok or skillet over medium heat. Add the sliced onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent and the garlic is fragrant.
  3. Cook Vegetables: Add the julienned carrot, shredded cabbage, and snow peas to the wok. Stir-fry the vegetables for 3-4 minutes until they are tender yet still crisp.
  4. Add Chicken: Stir in the shredded cooked chicken and cook for an additional 2 minutes to allow the flavors to blend together.
  5. Add Sauces and Seasoning: Pour in the soy sauce, oyster sauce, and ground black pepper. Mix everything well to combine the flavors thoroughly.
  6. Simmer with Broth and Noodles: Pour the chicken broth into the wok and bring to a simmer. Add the drained rice noodles and gently toss them with the vegetables and chicken until the noodles are coated and begin to absorb the liquid.
  7. Finish Cooking: Continue cooking and tossing for another 3-5 minutes until the noodles are fully cooked and the flavors are well absorbed.
  8. Serve: Transfer the pancit to a serving platter. Garnish with fresh cilantro or green onions. Serve with lemon slices on the side for squeezing over the dish.

Notes

  • Use low sodium soy sauce and chicken broth to control the saltiness of the dish.
  • Feel free to substitute chicken with pork, shrimp, or tofu for variations.
  • Adjust the vegetable selection to your preference or seasonal availability.
  • Serve pancit immediately for the best texture of the noodles.
  • Lemon slices add a nice tangy contrast and brighten the flavors when squeezed over the noodles.
