Ingredients
Noodles
- 8 ounces rice noodles
Vegetables & Protein
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 medium carrot, julienned
- ½ small cabbage, shredded
- ½ cup snow peas, trimmed
- 1 cup cooked chicken, shredded
Sauces & Seasonings
- 2 tablespoons vegetable oil
- ¼ cup soy sauce (low sodium)
- 2 tablespoons oyster sauce
- ½ teaspoon ground black pepper
- 2 cups chicken broth (low sodium or no sodium added)
Garnish & Serving
- ½ lemon, sliced (for serving)
- Fresh cilantro or green onions, chopped (for garnish)
Instructions
- Soak the Noodles: Place the rice noodles in a large bowl and cover them with warm water. Let them soak for about 10 minutes or until softened. Drain and set aside.
- Sauté Aromatics: Heat the vegetable oil in a large wok or skillet over medium heat. Add the sliced onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent and the garlic is fragrant.
- Cook Vegetables: Add the julienned carrot, shredded cabbage, and snow peas to the wok. Stir-fry the vegetables for 3-4 minutes until they are tender yet still crisp.
- Add Chicken: Stir in the shredded cooked chicken and cook for an additional 2 minutes to allow the flavors to blend together.
- Add Sauces and Seasoning: Pour in the soy sauce, oyster sauce, and ground black pepper. Mix everything well to combine the flavors thoroughly.
- Simmer with Broth and Noodles: Pour the chicken broth into the wok and bring to a simmer. Add the drained rice noodles and gently toss them with the vegetables and chicken until the noodles are coated and begin to absorb the liquid.
- Finish Cooking: Continue cooking and tossing for another 3-5 minutes until the noodles are fully cooked and the flavors are well absorbed.
- Serve: Transfer the pancit to a serving platter. Garnish with fresh cilantro or green onions. Serve with lemon slices on the side for squeezing over the dish.
Notes
- Use low sodium soy sauce and chicken broth to control the saltiness of the dish.
- Feel free to substitute chicken with pork, shrimp, or tofu for variations.
- Adjust the vegetable selection to your preference or seasonal availability.
- Serve pancit immediately for the best texture of the noodles.
