For the Onion Mixture

- 5 medium onions, sliced thin

Main Ingredients
- 3 cups cauliflower florets
- 4 boneless, skinless chicken breasts
- 1 cup shredded mozzarella or gruyere cheese

Instructions
- Preheat the Oven: Preheat your oven to 400ºF (200ºC) to prepare for baking the chicken later.
- Caramelize the Onions: Heat butter and oil in a large oven-safe skillet over medium-high heat. Add the sliced onions and cook undisturbed for 5 minutes until they start to sweat and brown in spots. Reduce heat to medium-low, add salt, and cook for another 10-15 minutes, stirring occasionally until onions are soft and caramelized. Add minced garlic and thyme, cooking for 2 more minutes. Stir in beef stock and Dijon mustard, scraping browned bits off the bottom, and cook until the liquid reduces by half, about 2 minutes.
- Mix Cauliflower with Onion Mixture: Set aside ½ cup of the caramelized onion mixture for topping. Add the cauliflower florets to the skillet and combine with the remaining onion mixture.
- Prepare and Arrange Chicken: Season chicken breasts with salt and pepper. Nestle the chicken pieces into the skillet among the onion-cauliflower mixture. Spread the reserved half-cup of onions on top of each chicken breast.
- Bake the Chicken: Place the skillet in the preheated oven and bake until the chicken is cooked through and juices run clear, approximately 20 minutes.
- Broil with Cheese: Preheat your broiler. Sprinkle shredded mozzarella or gruyere cheese evenly over the baked chicken breasts. Broil for about 1 minute or until the cheese is melted and bubbly, watching closely to prevent burning.
- Serve: Remove the thyme sprigs from the skillet and serve the French Onion Chicken Bake hot, enjoying the mix of caramelized onions, tender chicken, and melted cheese.
