Instructions

Add the sliced onions and cook undisturbed for 5 minutes until they start to sweat and brown in spots. Reduce heat to medium-low, add salt, and cook for another 10-15 minutes, stirring occasionally until onions are soft and caramelized. Add minced garlic and thyme, cooking for 2 more minutes. Stir in beef stock and Dijon mustard, scraping browned bits off the bottom, and cook until the liquid reduces by half, about 2 minutes.
  3. Mix Cauliflower with Onion Mixture: Set aside ½ cup of the caramelized onion mixture for topping. Add the cauliflower florets to the skillet and combine with the remaining onion mixture.
  4. Prepare and Arrange Chicken: Season chicken breasts with salt and pepper. Nestle the chicken pieces into the skillet among the onion-cauliflower mixture. Spread the reserved half-cup of onions on top of each chicken breast.
