Graham Cracker Layer
- 12 graham cracker sheets (broken into 48 pieces)
Pudding Layer
- 1 box (1.4 oz) sugar-free chocolate pudding mix
- 2 cups fat-free skim milk
Cream Layer
- 6 oz fat-free Cool Whip
Instructions
- Prepare the Chocolate Pudding: In a medium bowl, stir together the sugar-free chocolate pudding mix and fat-free skim milk until combined. Let it rest for about 5 minutes to thicken.
- Assemble the Base Layer: Line an 8×10-inch baking pan with parchment paper. Evenly spread the thickened pudding mixture across the bottom of the pan using a spatula for an even layer.
- Freeze the Pudding: Place the baking pan in the freezer for about 1 hour, or until the pudding layer is mostly frozen and set.
- Add the Cool Whip Layer: Remove the pan from the freezer and gently spread the fat-free Cool Whip evenly over the frozen pudding.
- Freeze Again: Return the pan to the freezer and let it freeze until the Cool Whip layer is firm, about 1 additional hour.
- Top with Graham Crackers: Break each graham cracker sheet into four pieces to make 48 cracker pieces. Arrange 24 pieces over the top of the frozen Cool Whip layer, covering the surface as evenly as possible.
- Flip to Add Bottom Cracker Layer: Place a clean baking sheet over the pan. Hold both pans together and carefully flip upside down. Gently lift off the original pan and peel away the parchment paper.
- Finish with Remaining Crackers: Top the exposed pudding side with the remaining 24 graham cracker pieces to create a sandwich effect.
- Slice and Serve: Using a sharp knife, carefully cut into 24 even squares. Serve immediately, or refreeze until ready to enjoy.
Notes
- For best texture, let frozen s’mores sit at room temperature for 2–3 minutes before eating.
- You can substitute regular or reduced-fat Cool Whip if desired.
- If you don’t have an 8×10-inch pan, a similar-sized pan will work; just adjust layer thickness as needed.
- Store leftovers in an airtight container in the freezer for up to one week.
