Ingredients
Chicken
- 12 chicken drumsticks
Sauce & Seasoning
- ½ cup olive oil
- 8 cloves garlic, minced
- 2 tablespoons smoked paprika
- ½ teaspoon red pepper flakes
- ¼ cup fresh parsley, chopped
- 2 tablespoons fresh oregano, chopped
- ½ teaspoon salt, or to taste
- ½ teaspoon black pepper, or to taste
Instructions
- Preheat the Oven: Set your oven to 425°F (220°C) to ensure it’s fully heated by the time you finish preparing the chicken.
- Prepare Garlic and Spice Mixture: In a small skillet, heat the olive oil over medium heat. Add the minced garlic, smoked paprika, red pepper flakes, parsley, and oregano. Cook for about 1 minute, stirring constantly, being careful not to burn the garlic, which will impart bitterness.
- Season the Chicken: Thoroughly clean and pat dry the chicken drumsticks with paper towels. Season all sides with salt and black pepper according to taste to enhance flavor and promote crispiness.
- Coat the Drumsticks: Pour the warm olive oil and spice mixture over the seasoned drumsticks. Use your hands or a brush to ensure each drumstick is evenly coated with the flavorful sauce.
- Arrange and Bake: Place the coated drumsticks evenly spaced in a 9×13 inch baking dish. Bake in the preheated oven for about 45 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Serve: Once cooked, remove from the oven and serve alongside your favorite side dishes or a fresh salad for a complete meal.
Notes
- If you can’t find smoked paprika, regular paprika works as a suitable substitute.
- This spice blend is versatile and can be used on other chicken cuts such as breasts or leg quarters; cooking time remains similar.
- Patting the chicken dry before seasoning removes excess moisture, resulting in crispier skin.
- Do not burn the garlic; cook it only about 1 minute to avoid bitterness.
- Use an instant-read thermometer to ensure drumsticks reach a safe internal temperature of 165°F (74°C).
- Store leftovers in an airtight container in the refrigerator for 3 to 4 days. Reheat in microwave or oven before serving.
