For the Chicken

- 1 ½ pounds boneless skinless chicken breasts, pounded to an even thickness (about 4 average-sized breasts)
- 1 to 2 teaspoons 21 Salute Seasoning or poultry seasoning

For the Sauce
- ½ cup white wine* or chicken broth, or as necessary
- 3 tablespoons unsalted butter, or more if you want extra sauce
- 1 tablespoon garlic, finely minced; or to taste
- 2 teaspoons fresh parsley, optional for garnishing
Instructions
- Sear the Chicken: To a large skillet, add the olive oil and the pounded chicken breasts. Evenly season the chicken with 21 Salute seasoning (or poultry seasoning), salt, and black pepper. Cook over medium-high heat for 5 minutes without moving or disturbing the chicken, allowing it to sear and develop a golden crust. If your chicken breasts are thicker, extend this step to 6-7 minutes.
- Cook Other Side: Flip the chicken over. Let it cook undisturbed for another 5 minutes, or until fully cooked through. This ensures a juicy, evenly cooked chicken with a golden exterior.
- Remove and Rest: Using a slotted spatula, carefully remove the chicken from the skillet and place it on a plate to rest while you make the sauce.
- Deglaze the Pan: With caution, add the white wine or chicken broth to deglaze the skillet. Allow the liquid to bubble up and steam for a few seconds, scraping any browned bits from the bottom — these add great flavor to the sauce.
- Add Butter: Add the butter to the skillet and stir continuously until fully melted, about 1 minute, enriching the sauce base.
- Cook Garlic: Add the finely minced garlic and cook, stirring, until fragrant, about 1 minute. Be attentive to avoid burning the garlic, as it can turn bitter.
- Finish Chicken in Sauce: Turn off the heat. Add the chicken back into the skillet, flipping it a few times in the garlicky butter sauce to coat it thoroughly. Spoon some extra sauce over the chicken for maximum flavor.
- Garnish and Serve: Optionally, sprinkle with fresh parsley and serve immediately. Enjoy hot with your favorite sides.
