- 1 pound uncooked large shrimp, peeled and deveined

Cooking Ingredients

- 1 small shallot, minced
- ½ cup dry white wine or low-sodium chicken stock or broth
- 4 cloves garlic, minced
- 1 small lemon (zest and juice)
- 1 tablespoon chopped fresh rosemary or thyme (optional but recommended)
- ¼ cup chopped fresh parsley

Instructions
- Prepare the shrimp: Pat the shrimp dry with paper towels and place in a large bowl. Sprinkle with kosher salt, freshly ground black pepper, and cayenne pepper. Toss well to coat evenly.
- Sauté the shallot: Heat 2 tablespoons of the butter in a large skillet over medium heat until melted. Add the minced shallot and cook for 1 to 2 minutes until it just begins to soften, stirring occasionally.
- Cook the shrimp: Add the shrimp to the skillet in a single layer. Allow the shrimp to cook undisturbed for 1 minute, then use tongs or a wide spatula to turn them over.
- Add wine and garlic: Pour in the white wine (or chicken stock/broth) and add the minced garlic. Continue cooking for 2 to 3 minutes until the shrimp are no longer translucent and the wine has reduced by half.
- Finish the sauce: Remove the skillet from heat. Stir in the remaining 1 tablespoon of butter until melted. Zest the lemon directly over the skillet, then juice half of the lemon into the skillet. Slice the other half into wedges for serving.
- Add herbs and serve: Stir in the chopped rosemary or thyme (if using) and parsley. Toss gently to combine all flavors. Serve immediately with lemon wedges and your choice of cooked rice, pasta, grits, or toasted bread.

- Make sure to pat the shrimp dry before seasoning to ensure they sear well and do not steam.
- If you prefer a non-alcoholic option, low-sodium chicken stock or broth works well instead of white wine.
- Fresh herbs add vibrant flavor but can be omitted if unavailable.
