Ingredients

  • 4 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • ½ tsp kosher salt
  • ½ tsp ground pepper

For the Steak

  • lbs sirloin steak, cut into 1-inch cubes (or beef tenderloin, NY strip steak, or stir fry meat)
  • Freshly chopped parsley, optional for garnish

Instructions

  1. Heat the skillet and melt butter: Heat a cast iron skillet over medium-high heat. Add the olive oil and 2 tablespoons of the butter. Allow the butter to melt completely before adding any other ingredients.
  2. Cook the potatoes and aromatics: Add diced potatoes, minced garlic, dried rosemary, dried oregano, salt, and pepper to the skillet. Cook for about 4 minutes without stirring to allow the potatoes to get some color. Then stir and continue cooking for another 3-4 minutes until the potatoes are fork tender. Once done, remove the potatoes from the skillet and place them in a bowl.
  3. Cook the steak bites: Increase the heat to high and return the skillet to the stove. Add the remaining 2 tablespoons of butter and stir to melt. Arrange the steak cubes in a single layer in the skillet. Cook for 1 minute, then flip or stir and cook for an additional 1-2 minutes until the steak reaches your desired doneness. Remove the skillet from heat.
  4. Combine steak and potatoes: Add the cooked potatoes back to the skillet and toss well with the steak to combine all the flavors. Adjust salt and pepper as needed.
