Steak & Potatoes
- 4 Tablespoons butter, divided
- 1 Tablespoon olive oil
- 1 pound potatoes, cut into bite size pieces
- 6 cloves garlic, minced
- 1 Tablespoon fresh rosemary, finely chopped
- 1 Tablespoon fresh oregano, finely chopped
- 1 teaspoon kosher salt, divided
- 2 pounds sirloin steak, cut into 1 inch pieces
- ½ teaspoon black pepper
- ¼ Cup water
- 2 Tablespoons fresh parsley, finely chopped
Instructions
- Heat Butter and Oil: Add 1 tablespoon butter and olive oil to a skillet over medium heat to prepare the pan for sautéing.
- Cook Potatoes with Herbs and Garlic: Once the oil is hot, add the potatoes, minced garlic, fresh rosemary, oregano, and ½ teaspoon kosher salt. Cook for about 5 minutes until the garlic turns golden brown and the potatoes begin to soften.
- Steam Potatoes: Pour ¼ cup water into the skillet, cover the pan, reduce heat to medium-low, and cook for 5 to 10 minutes or until potatoes are fork tender. Remove potatoes to a bowl and tent with foil to keep warm.
- Sear the Steak: Add remaining butter to the pan and raise heat to medium-high. When the butter has melted, add the steak pieces. Season with the remaining ½ teaspoon salt and black pepper. Cook until steak pieces develop a nice brown crust and reach your preferred doneness.
- Combine Potatoes and Steak: Return the cooked potatoes to the skillet with the steak. Stir together and cook for 1-2 minutes to heat everything through evenly.
- Finish with Parsley: Stir in the fresh parsley just before serving to add a burst of freshness.

- For evenly cooked potatoes, cut them into uniform bite-sized pieces.
- You can substitute sirloin with ribeye or strip steak for a richer flavor.
- Adjust cooking time of the steak bites based on your preferred level of doneness.
- Use fresh herbs for the best flavor impact, but dried herbs can be used in a pinch (reduce quantity by half).
- Covering the potatoes while cooking with water helps steam them to fork-tender perfection without drying out.
