Ingredients
For the Potatoes
- 1 tablespoon olive oil, divided
- 1 lb baby red and yellow potatoes, cut into ½ inch cubes
- 3 large garlic cloves, minced
- 1 teaspoon fresh parsley, chopped
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh rosemary, chopped
- ¼ – ½ teaspoon red pepper flakes (to taste)
- Salt and pepper, to taste
For the Steak Bites
- 2 tablespoons butter, divided
- 1 – 1 ¼ lb sirloin steak, cut into 1-inch cubes
- Salt and pepper, to taste
Instructions
- Prepare the skillet and melt fats – Heat a large skillet over medium heat. Add one tablespoon of butter and ½ tablespoon of olive oil, melting together until the mixture is hot and foamy.
- Cook the potatoes and aromatics – Add cubed potatoes, minced garlic, fresh herbs, and red pepper flakes. Sauté for 5-6 minutes, stirring occasionally, until potatoes are tender but still hold their shape. Season with salt and pepper to taste.
- Remove potatoes and clean skillet – Transfer potatoes to a plate and discard any burnt pieces of garlic or herbs, cleaning the skillet for the next step.
- Sear the steak bites – Increase the skillet to high heat. Once it begins to smoke slightly, add the remaining ½ tablespoon of olive oil and the second tablespoon of butter. Add steak cubes in a single layer and sear undisturbed for about 1 minute. Continue to cook, turning to brown all sides, until steak bites reach your preferred doneness, about 4-6 minutes. Season with salt and pepper to taste.
- Combine and finish – Return the cooked potatoes to the skillet. Toss everything together and cook for another minute until heated through and well mixed.
- Serve – Remove from heat and serve warm, garnished with extra fresh herbs if desired.
Notes
- For the juiciest steak bites, use sirloin or any tender steak cut.
- If you prefer extra crispy potatoes, extend their cooking time by a few minutes before removing from the skillet.
- Fresh herbs add wonderful flavor, but dried can be substituted in a pinch (use about 1/3 the amount).
- To avoid steaming, cook steak bites in batches if your skillet isn’t large enough to keep pieces in a single layer.
