  • 11 ¼ lb sirloin steak, cut into 1-inch cubes

Instructions

  1. Prepare the skillet and melt fats – Heat a large skillet over medium heat. Add one tablespoon of butter and ½ tablespoon of olive oil, melting together until the mixture is hot and foamy.
  2. Cook the potatoes and aromatics – Add cubed potatoes, minced garlic, fresh herbs, and red pepper flakes. Sauté for 5-6 minutes, stirring occasionally, until potatoes are tender but still hold their shape. Season with salt and pepper to taste.
  3. Remove potatoes and clean skillet – Transfer potatoes to a plate and discard any burnt pieces of garlic or herbs, cleaning the skillet for the next step.
  4. Sear the steak bites – Increase the skillet to high heat. Once it begins to smoke slightly, add the remaining ½ tablespoon of olive oil and the second tablespoon of butter. Add steak cubes in a single layer and sear undisturbed for about 1 minute. Continue to cook, turning to brown all sides, until steak bites reach your preferred doneness, about 4-6 minutes. Season with salt and pepper to taste.
  5. Combine and finish – Return the cooked potatoes to the skillet. Toss everything together and cook for another minute until heated through and well mixed.
