For the Caramelized Onions and Filling
- 2 tablespoons butter
- 2-3 onions, chopped (Vidalia onions recommended)
- 1/4 cup balsamic vinegar
- 8 oz log goat cheese
For the Chicken
- 2 lbs chicken tenderloins
- 1 large egg
- 1 tablespoon milk
- 2 cups panko bread crumbs
- 2 tablespoons vegetable oil
- 1/4 cup heavy whipping cream
Instructions
- Caramelize the Onions: Melt the butter in a large skillet over medium heat. Add the chopped onions and stir to coat them evenly in the butter. Cook the onions over medium to medium-low heat, stirring every 10 minutes to prevent burning, for about 50 minutes until they become soft and golden brown. At the 50-minute mark, add the balsamic vinegar and stir for a few more minutes, then remove the pan from heat and allow the onions to cool.
- Prepare the Filling: Once the caramelized onions have cooled, mix them thoroughly with the goat cheese to create the stuffing for the chicken.
- Prepare the Egg Wash: In a separate bowl, whisk together the egg and milk until well blended; this mixture will help the bread crumbs stick to the chicken.
- Stuff the Chicken: Lay each chicken tenderloin flat and place 2-3 tablespoons of the goat cheese and onion mixture onto each piece. Be generous but avoid overfilling to allow for easy rolling.
- Roll and Bread the Chicken: Roll the chicken around the filling, dip each roll in the egg wash ensuring it is fully coated, then roll it in the panko bread crumbs. Set the prepared chicken rolls aside until all are stuffed and breaded.
- Pan-Fry the Chicken: Heat the vegetable oil in a skillet over medium heat. Pan-fry the breaded chicken rolls until the breading is golden brown on all sides. Do this in batches as needed, adding more oil between batches. The chicken does not need to be fully cooked at this stage.
- Bake the Chicken: Preheat the oven to 350°F (175°C). Transfer the browned chicken rolls to a baking dish or oven-safe pan and bake for 10-15 minutes until the chicken is cooked through, reaching an internal temperature of 165°F (74°C).
- Prepare the Sauce and Serve: While the chicken bakes, warm the remaining goat cheese mixture with the heavy cream over low heat until it liquefies into a smooth sauce. Once the chicken is done, spoon the warm goat cheese cream sauce over each roll before serving.
Notes
- Cooking onions low and slow ensures maximum caramelization and sweetness.
- Use a meat thermometer to verify the chicken reaches a safe internal temperature of 165°F (74°C).
- Do not overfill the chicken rolls to prevent leakage while cooking.
- Panko breadcrumbs are preferred for a crisp, light coating.
- Serve with a fresh salad or roasted vegetables for a complete meal.
