Ingredients
Chicken Marinade
- 16 oz chicken breasts, cut into bite-sized pieces
- 2 tablespoons lemon juice
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried dill
- 1 tablespoon olive oil (for marinating)
Cooking
- 2 tablespoons olive oil (for cooking)
Optional for Serving
- Tzatziki
- Pita breads
- Greek salad
Instructions
- Prepare the Chicken: Cut the chicken breasts into bite-sized pieces. In a bowl, combine the chicken with 1 tablespoon of olive oil, lemon juice, dried oregano, garlic powder, salt, black pepper, and dried dill. Mix well to coat all pieces evenly.
- Marinate: Place the chicken in the refrigerator and let it marinate for at least 1 hour. This allows the flavors to infuse deeply into the meat.
- Heat the Pan: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until hot and shimmering.
- Cook the Chicken: Add the marinated chicken pieces in a single layer to the skillet. Let them cook undisturbed for about 5 minutes to develop a golden sear on one side.
- Flip and Finish Cooking: Flip the chicken pieces and continue cooking for another 3 to 5 minutes until they are cooked through and juicy inside with no pink remaining.
- Serve: Remove the chicken from the skillet and serve warm with optional tzatziki sauce, warm pita breads, and a fresh Greek salad for a complete Mediterranean meal.
Notes
- Marinate the chicken longer, up to 4 hours, for even more flavorful bites.
- You can substitute chicken thighs for a juicier option.
- Use gluten-free pita or omit for a gluten-free meal.
- Adjust seasoning to taste, adding more lemon juice or herbs if desired.
- Perfect for meal prep—store cooked chicken in the fridge for up to 3 days.
