Ingredients

  • 8 oz of your favorite pasta (MAFALDINE recommended)

Instructions

  1. Cook Pasta: Start by boiling the pasta in salted water until al dente. Use any preferred pasta shape; this recipe uses about half a package of Mafaldine. Once cooked, reserve 1/4 cup of the pasta cooking water before draining.
  2. Prepare Sauce: Add fresh dill, chives, cilantro, shallot, extra virgin olive oil, fresh lemon juice, cottage cheese, Greek yogurt, salt, pepper, and pasta water to a blender. Blend until the mixture is smooth and creamy. Taste and adjust salt and pepper as necessary.
  3. Combine Pasta and Sauce: Pour the blended sauce into a skillet set over low heat. Add the cooked pasta noodles and toss gently to fully coat them in the sauce.
  4. Add Parmesan Cheese: Stir in the freshly grated parmesan cheese until evenly distributed and the sauce becomes slightly thicker and creamy.
  5. Serve: Serve the pasta warm, optionally garnished with additional parmesan cheese for extra flavor and richness. Enjoy immediately for the best taste and texture.
