Dairy and Sauce Ingredients
- 1/3 cup high quality extra virgin olive oil
- 1 tbsp fresh lemon juice
- 1/2 cup cottage cheese (good culture preferred)
- 1/4 cup plain Greek yogurt (e.g., Greek Gods)
- 1/4 cup pasta water
- 1/2 cup freshly grated parmesan cheese
Seasonings
- 1 tsp salt (adjust to taste)
- 1/2 tsp black pepper (adjust to taste)
Pasta
- 8 oz of your favorite pasta (MAFALDINE recommended)
Instructions
- Cook Pasta: Start by boiling the pasta in salted water until al dente. Use any preferred pasta shape; this recipe uses about half a package of Mafaldine. Once cooked, reserve 1/4 cup of the pasta cooking water before draining.
- Prepare Sauce: Add fresh dill, chives, cilantro, shallot, extra virgin olive oil, fresh lemon juice, cottage cheese, Greek yogurt, salt, pepper, and pasta water to a blender. Blend until the mixture is smooth and creamy. Taste and adjust salt and pepper as necessary.
- Combine Pasta and Sauce: Pour the blended sauce into a skillet set over low heat. Add the cooked pasta noodles and toss gently to fully coat them in the sauce.
- Add Parmesan Cheese: Stir in the freshly grated parmesan cheese until evenly distributed and the sauce becomes slightly thicker and creamy.
- Serve: Serve the pasta warm, optionally garnished with additional parmesan cheese for extra flavor and richness. Enjoy immediately for the best taste and texture.

- Reserve some pasta water to help loosen and emulsify the sauce if needed.
- Adjust herbs and seasoning quantities to your taste preference for freshness and balance.
- This sauce is best served fresh but can be refrigerated for up to 2 days. Reheat gently on low heat to avoid curdling.
- Use high-quality extra virgin olive oil and fresh herbs for maximum flavor.
- Substitute parmesan with Pecorino Romano for a sharper taste if desired.
