Instructions
- Prepare the Marinade: In a mixing bowl, whisk together the juice and zest of 2 oranges, 2 lemons, and 2 limes with 4 minced garlic cloves, 1/4 cup olive oil, 2 tablespoons honey, and salt and pepper to taste. Make sure all ingredients are well combined for an even flavor base.
- Marinate the Chicken: Place the chicken breasts or thighs into a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is thoroughly coated. Seal or cover, and refrigerate for at least 2 hours (overnight is ideal for maximum flavor).
- Prepare the Citrus Glaze: In a small saucepan, mix 1/2 cup orange juice, 2 tablespoons honey, 1 tablespoon soy sauce, 1 teaspoon cornstarch, and a pinch of red pepper flakes (if using). Whisk until smooth. Cook over medium heat, stirring constantly, until the glaze thickens, approximately 5 minutes. Remove from heat and set aside.
- Preheat the Grill: Heat your grill or grill pan to medium-high. Brush with a little oil, if necessary, to prevent sticking.
- Grill the Chicken: Remove the chicken from the marinade, letting the excess liquid drip off. Grill the chicken for 6–7 minutes per side, or until nicely charred and the internal temperature reaches 165°F (75°C).
- Glaze the Chicken: In the final minutes of grilling, brush the thickened citrus glaze onto both sides of the chicken. Allow it to caramelize slightly, turning as needed to avoid burning.
- Garnish and Serve: Transfer the chicken to a serving platter, garnish with fresh chopped herbs and citrus slices, and serve hot. This dish pairs well with grilled vegetables, a green salad, or steamed rice.
