These Grilled Shrimp Skewers are a quick and delicious seafood recipe featuring juicy shrimp marinated in a flavorful blend of coconut milk, soy sauce, garlic, lime, honey, and ginger. Perfectly grilled and topped with fresh cilantro and toasted coconut, this dish offers a wonderful balance of sweet and savory notes that make it an ideal appetizer or main course for any summer gathering or weeknight meal.

  • Total Time: 44 minutes (including 30 minutes marinating)
  • Yield: 4 servings

Ingredients

Marinade and Shrimp

  • 1 Pound Shrimp, peeled and deveined
  • 1 Cup Full-Fat Coconut Milk
  • 2 TBSP Soy Sauce
  • 2 cloves Garlic, minced
  • 1 Lime, juice and zest
  • 1 tsp Ginger Paste
  • 1 TBSP Honey

Toppings

  • Chopped Cilantro, for garnish
  • Toasted Coconut, for garnish

Serving Suggestion

  • Sweet Chili Sauce, for serving

Instructions

  1. Prepare the Marinade: In a mixing bowl, combine the coconut milk, soy sauce, minced garlic, lime juice and zest, honey, and ginger paste. Whisk everything together until well blended to create a flavorful marinade for the shrimp.
  2. Marinate the Shrimp: Add the peeled and deveined shrimp to the marinade, ensuring they are all evenly coated. Cover the bowl and refrigerate for 30 minutes to allow the shrimp to absorb the flavors.
  3. Preheat the Grill: Preheat your grill to 400°F (204°C). While the grill is heating, assemble the shrimp skewers by threading approximately 5 shrimp onto each skewer.
  4. Grill the Shrimp: Oil the grill grates lightly to prevent sticking. Place the shrimp skewers on the grill and cook for 2 minutes on one side. Flip the skewers and grill for an additional 2 minutes, or until the shrimp are opaque and reach an internal temperature of 145°F (63°C).
  5. Garnish and Serve: Remove the shrimp skewers from the grill and sprinkle chopped cilantro and toasted coconut on top for added freshness and texture. Serve warm alongside sweet chili sauce for dipping and enjoy!

Notes

  • Be careful not to overcook the shrimp as they can become rubbery; grilling for 4 minutes total is optimal.
  • If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
  • You can substitute lime with lemon if preferred, though lime provides a slightly sweeter, zestier flavor.
  • For a spicier kick, add a pinch of red pepper flakes to the marinade.
  • This recipe pairs well with steamed rice or a fresh green salad for a complete meal.
