Ingredients
Ground Beef Stir Fry
- 1/2 tablespoon olive oil
- 3 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 pound ground beef (90/10 recommended)
- 1 cup diced onion (120 grams)
- 5 cups sliced cabbage (300 grams)
- 2 cups julienned red bell peppers (220 grams)
- 1 cup shredded carrots (85 grams)
- Salt and pepper, to taste
- Toppings: sliced green onions, sesame seeds, cilantro, sriracha (optional)
- For serving: white rice or cauliflower rice
Stir Fry Sauce
- 3 tablespoons coconut aminos
- 2 tablespoons lime juice
- 1/2 tablespoon honey (omit for Whole30)
- 1 teaspoon sriracha
- 1/2 teaspoon sesame oil
- 1/2 teaspoon fish sauce
- Pinch of pepper
Instructions
- Make the stir-fry sauce: In a small bowl or jar, combine coconut aminos, lime juice, honey, sriracha, sesame oil, fish sauce, and a pinch of pepper. Stir well and adjust seasoning to taste. Set aside.
- Cook the beef: Heat a large cast iron skillet over medium to medium-low heat and add olive oil. Once hot, add grated ginger and minced garlic, sautéing while stirring continuously for about 30 seconds until fragrant, taking care not to burn them. Add ground beef and season with salt and pepper. Break the meat apart with a spatula and cook for about 5-6 minutes until browned and cooked through. Remove beef from skillet and set aside.
- Sauté the vegetables: Keeping the beef juices in the pan, add diced onion with salt and pepper, cooking for 2-3 minutes while stirring occasionally. Add sliced cabbage and stir to combine; cook for another 1-2 minutes. Next, add julienned red bell peppers with a bit more salt and pepper; sauté for 3-4 minutes. Finally, add shredded carrots and cook for 1-2 minutes more.
- Combine and finish: Return the cooked ground beef and any juices to the skillet along with the prepared stir-fry sauce. Stir everything together and let it warm through for 1-2 minutes to meld flavors.
- Serve: Plate the stir fry and garnish with your choice of optional toppings like sliced green onions, sesame seeds, cilantro, or a drizzle of sriracha. Serve alongside white rice or cauliflower rice for a complete meal.
Notes
- Use 90/10 lean ground beef for less fat but good flavor; higher fat content beef can be substituted but drain excess fat if needed.
- Omit honey from the sauce to make this recipe fully Whole30 compliant.
- Adjust the amount of sriracha for your preferred level of spiciness.
- This recipe can be doubled easily for meal prep or feeding more people.
- For a lower-carb option, serve with cauliflower rice instead of white rice.
- Make sure not to overcook the vegetables; they should remain slightly crisp to retain texture.
