Instructions

  1. Cook the beef: Heat the olive oil in a large skillet over medium-high heat until shimmering. Add the ground beef, diced onion, chopped garlic, and chopped green bell pepper. Cook while breaking up the meat with a wooden spoon, until the beef is browned and the onions become soft, about 8 to 10 minutes.
  2. Add the potatoes and sauce: Stir in kosher salt, smoked paprika, dried oregano, onion powder, tomato paste, Dijon mustard, and Worcestershire sauce. Pour in the chicken stock, add the peeled and chopped potatoes, and stir until well combined. Increase the heat to high and bring the mixture to a simmer.
  3. Simmer the mixture: Reduce heat to medium-low, cover the skillet with a lid, and cook, stirring occasionally, until the potatoes are tender and most of the liquid has evaporated, approximately 20 minutes.
