- 1 teaspoon ground cumin

Meat & Vegetables
- 1 1/2 tablespoons olive oil (divided)
- 1 pound lean ground beef
- 1 pound Yukon Gold potatoes, cut into 1/4 inch dice
- 1/2 cup diced yellow onion
- 1 poblano pepper, seeded and diced
- 4 ounces diced green chiles
- 2 tablespoons chopped cilantro (plus extra for garnish)
Other Ingredients
- 15 ounces mild green enchilada sauce (such as Hatch or Siete Foods)
- 1 cup shredded cheese (Colby Jack, Monterey Jack, or cheddar cheese)
Instructions
- Prepare spice blend: In a small bowl, combine chili powder, cumin, garlic powder, and kosher salt. Set aside.
- Cook ground beef: Heat 1/2 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Add ground beef and crumble it while cooking. Season with half of the spice blend. Cook for 5-7 minutes until beef is fully cooked. Remove beef from skillet and set aside on a plate.
- Cook vegetables: Add remaining 1 tablespoon olive oil to the same skillet, reduce heat to medium. Add diced potatoes, onion, poblano pepper, and the remaining spice blend. Cook, stirring frequently, for 10-12 minutes until potatoes are tender. If mixture starts to stick or brown too quickly, add a few tablespoons of water as needed.
- Add herbs and chiles: Once potatoes are tender, stir in chopped cilantro and diced green chiles until evenly combined.
- Combine beef and sauce: Return cooked ground beef to the skillet. Pour in the mild green enchilada sauce, stirring to coat all ingredients thoroughly.
- Add cheese and bake: Sprinkle shredded cheese evenly on top of the mixture. Cover the skillet with foil and bake in preheated 375° F oven for 15 minutes.
- Broil cheese: Remove foil, turn oven setting to broil. Bake an additional 3-5 minutes or until the cheese is bubbly and starting to brown.
- Garnish and serve: Remove casserole from oven, garnish with extra chopped cilantro, and serve hot.
Notes
- Use an oven-safe skillet (like cast iron) to cook and bake in the same pan for easy cleanup.
- If you prefer spicier, increase chili powder or add diced jalapeños.
- Adjust salt level according to taste, especially if using salted enchilada sauce.
- For a vegetarian option, substitute ground beef with plant-based crumbles or cooked beans.
- If potatoes start sticking during cooking, adding water helps prevent burning and promote even cooking.
