Shrimp and Coating
- 1 lb shrimp, deveined
- 2 tablespoons glutinous rice flour (sweet rice flour) or all-purpose flour
- 1 tablespoon paprika
- ½ teaspoon cayenne pepper
- 1 ½ teaspoon salt
Garlic Butter Sauce
- 8 tablespoons unsalted butter
- ½ cup (100 g) garlic, minced (about 2 heads of garlic)
- 3 tablespoons olive oil
Finishing Touches
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon fresh parsley, minced for garnish
Instructions
- Prepare the shrimp: Wash and devein the shrimp. You can peel the shrimp leaving the tail on or leave the shell on according to your preference. Pat dry thoroughly with a paper towel to ensure proper coating and crispiness when cooked.
- Coat the shrimp: In a mixing bowl, combine the glutinous rice flour, paprika, cayenne pepper, and salt. Evenly coat each piece of shrimp with the flour mixture and set aside.
- Cook garlic butter: Heat a medium skillet over medium heat and melt the unsalted butter. Add the minced garlic and sauté for about 2 minutes until the garlic is fragrant and lightly golden brown. Be careful not to burn the garlic. Remove from heat and set aside.
- Cook the shrimp: In the same skillet, increase heat to medium-high and add olive oil. When the oil is hot, add the shrimp in a single layer. Cook for 1-2 minutes on each side until the shrimp are crisp and cooked through. You may need to cook in batches to avoid overcrowding, adding oil before each batch.
- Combine: Turn off the heat and pour the prepared garlic butter sauce back into the skillet with the shrimp. Toss gently to coat the shrimp evenly in the garlic butter.
- Serve: Drizzle the shrimp with freshly squeezed lemon juice and garnish with minced fresh parsley. Serve immediately and enjoy the vibrant flavors.

- Using glutinous rice flour helps to create a crispier coating, but all-purpose flour works well as a substitute.
- Peeling shrimp with tails on is traditional and makes for a better presentation, but leaving shells on can add extra flavor during cooking.
