Hawaiian Garlic Shrimp is a succulent and flavorful dish inspired by the famous shrimp trucks of Hawaii. Large shrimp are coated in a seasoned rice flour mixture, pan-fried until crispy, and then tossed in a rich, aromatic garlic butter sauce. Finished with a splash of fresh lemon juice and parsley, this quick and delicious recipe brings the taste of the islands to your table in under 30 minutes.

  • Total Time: 25 minutes
  • Yield: 5 servings

Ingredients

Shrimp and Coating

  • 1 lb shrimp, deveined
  • 2 tablespoons glutinous rice flour (sweet rice flour) or all-purpose flour
  • 1 tablespoon paprika
  • ½ teaspoon cayenne pepper
  • 1 ½ teaspoon salt

Garlic Butter Sauce

  • 8 tablespoons unsalted butter
  • ½ cup (100 g) garlic, minced (about 2 heads of garlic)
  • 3 tablespoons olive oil

Finishing Touches

  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon fresh parsley, minced for garnish

Instructions

  1. Prepare the shrimp: Wash and devein the shrimp. You can peel the shrimp leaving the tail on or leave the shell on according to your preference. Pat dry thoroughly with a paper towel to ensure proper coating and crispiness when cooked.
  2. Coat the shrimp: In a mixing bowl, combine the glutinous rice flour, paprika, cayenne pepper, and salt. Evenly coat each piece of shrimp with the flour mixture and set aside.
  3. Cook garlic butter: Heat a medium skillet over medium heat and melt the unsalted butter. Add the minced garlic and sauté for about 2 minutes until the garlic is fragrant and lightly golden brown. Be careful not to burn the garlic. Remove from heat and set aside.
  4. Cook the shrimp: In the same skillet, increase heat to medium-high and add olive oil. When the oil is hot, add the shrimp in a single layer. Cook for 1-2 minutes on each side until the shrimp are crisp and cooked through. You may need to cook in batches to avoid overcrowding, adding oil before each batch.
  5. Combine: Turn off the heat and pour the prepared garlic butter sauce back into the skillet with the shrimp. Toss gently to coat the shrimp evenly in the garlic butter.
  6. Serve: Drizzle the shrimp with freshly squeezed lemon juice and garnish with minced fresh parsley. Serve immediately and enjoy the vibrant flavors.

Notes

  • Using glutinous rice flour helps to create a crispier coating, but all-purpose flour works well as a substitute.
  • Peeling shrimp with tails on is traditional and makes for a better presentation, but leaving shells on can add extra flavor during cooking.
  • Watch the garlic closely as it cooks to avoid bitterness from burning.
  • Cooking shrimp in batches ensures even cooking and a crispy texture.
  • Adjust cayenne pepper to your preferred spice level.
