Instructions

  1. Prepare the egg mixture: Whisk together the 2 large eggs, 1 egg white, and 1 tablespoon of water. Season with salt and pepper to taste (about 1/4 teaspoon salt and 1/8 teaspoon pepper). Set aside to allow the mixture to blend.
  2. Cook meat and vegetables: Heat an 8-inch pan over medium heat. Add the turkey sausage, chopped bell peppers, and onion. Cook for about 3 minutes until onions turn translucent. Add the chopped spinach and cook just until wilted.
  3. Prepare the pan for eggs: Remove the cooked meat and vegetable mixture from the pan and place it on a plate. Wipe down the pan to clean it, then add 1 teaspoon of olive oil (or more if needed). Heat over medium until the oil is hot.
  4. Cook the eggs: Slowly pour the egg mixture into the hot pan. Let it set for about 30 seconds without stirring.
