Instructions
- Prepare Dry Ingredients: In a large shallow bowl, stir together 2 cups of all-purpose flour and 1/2 teaspoon of fine sea salt until well combined.
- Make Egg Mixture: Create a well in the center of the flour mixture, crack in 2 large eggs, and whisk them lightly with a fork. Add 1/4 cup water to the eggs.
- Combine Ingredients: Gradually whisk the flour from the edges of the well into the egg and water mixture until a dough forms. Add additional water 1 tablespoon at a time if the dough is too dry, or sprinkle more flour if too sticky.
- Knead Dough: Transfer dough to a well-floured surface and knead for 3 to 5 minutes until smooth and elastic. Shape into a ball and cover with a towel, letting it rest for 10 to 15 minutes.
- Roll Dough: Dust the surface with flour and roll the dough out into a thin sheet, about 1/4 to 1/8 inch thick. Allow it to rest for a few minutes to dry slightly.
- Cut Noodles: Fold the dough sheet several times into a loose roll. Using a sharp knife, cut the dough into thin strips about 1/4-inch wide. Unroll the strips and dust with flour to prevent sticking. Optionally, let noodles air dry for 15 to 30 minutes for firmer texture.
- Cook Noodles: Bring a large pot of chicken broth or salted water to a boil over medium heat. Add the fresh noodles and cook for 3 to 5 minutes until tender but still slightly firm (al dente).
- Drain and Serve: Drain the cooked noodles and serve immediately with butter and parmesan cheese, your favorite sauce, or add to soups for a homemade touch.
Notes
- Add water gradually because the dough consistency can vary based on humidity and flour type.
- Rolling dough thinner than 1/8 inch can make noodles very delicate and prone to breaking.
- Air drying noodles before cooking creates a firmer texture, which holds sauces better.
- Use chicken broth instead of water while cooking for added flavor if desired.
