Ingredients
Sauce
- 2 tablespoons unsalted butter
- 2 tablespoons chili crisp (Momofuku brand recommended)
- 1 tablespoon honey
- 1 teaspoon soy sauce
- 1 teaspoon apple cider vinegar
Wings
- 2 lbs. chicken wings
- 2 teaspoons sea salt
- 1 teaspoon ground black pepper
Instructions
- Preheat the Grill: Heat your grill to 425℉ to ensure it is hot enough for grilling chicken wings evenly with good sear marks.
- Season the Wings: Place the chicken wings in a large bowl, then sprinkle with sea salt and ground black pepper. Toss well to coat all wings evenly and set aside.
- Prepare the Sauce: In a small saucepan over medium heat, combine unsalted butter, chili crisp, honey, soy sauce, and apple cider vinegar. Stir until the butter melts, then bring the sauce to a gentle simmer. Let it cook for 5 minutes to meld the flavors. Remove from heat and set aside.
- Grill the Wings: Spray the grill grates with nonstick cooking spray to prevent sticking. Place the wings over direct heat, arranging drummettes in the center and flats around them. Grill for 15-20 minutes, flipping every 3-5 minutes to ensure even cooking and char marks. The wings are done when they reach an internal temperature of 165℉.
- Toss Wings in Sauce: Remove the fully cooked wings from the grill and immediately toss them in the prepared honey chili crisp sauce, coating every wing evenly.
- Serve: Plate the wings, optionally garnish with sesame seeds and chopped green onions for extra flavor and visual appeal, and serve immediately while hot and sticky.
Notes
- Use an instant-read thermometer to check that chicken wings reach 165℉ internally for safe consumption.
- If you don’t have chili crisp, you can substitute with chili garlic sauce or a similar spicy chili oil mixture.
- The wings can be prepared a day ahead and tossed in sauce just before serving to maintain crispiness.
- For a milder version, reduce the chili crisp amount or omit entirely and add a pinch of smoked paprika instead.
- Grilling times may vary depending on wing size and grill heat consistency; monitor carefully to avoid burning.
