Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) so it’s ready once your casserole is assembled, ensuring an even bake.
- Prepare the Mixture: In a large mixing bowl, combine the fresh corn kernels, creamed corn, sour cream, shredded cheddar cheese, honey, and melted butter. Stir the mixture until everything is evenly distributed and smooth.
- Combine Dry Ingredients: In a separate medium bowl, whisk together the cornmeal, baking powder, salt, black pepper, and garlic powder until fully blended.
- Incorporate Wet and Dry Ingredients: Gradually add the dry mixture into the wet mixture, stirring gently until just combined. Avoid overmixing to keep the casserole light and tender.
- Add Eggs: Gently fold in the beaten eggs to incorporate them completely, which will help set the casserole as it bakes.
