Ingredients
Bean Salsa
- 6 roma tomatoes, seeded and diced small
 - 2 avocados, diced
 - 1 red bell pepper, finely diced
 - 1 sweet onion, finely diced
 - 1 bag (16 oz) frozen gold n’ white corn, completely thawed
 - 1 can (15 oz) navy beans, drained & rinsed
 - 1 can (15 oz) pinto beans, drained & rinsed
 - 1 can (15 oz) black beans, drained & rinsed
 
Honey Lime Dressing
- 2 tablespoons olive oil (extra-virgin, light tasting)
 - 2 tablespoons honey
 - 2 tablespoons freshly squeezed lime juice (about 2 limes)
 - 1 teaspoon kosher salt
 - ¼ teaspoon black pepper
 
Instructions
- Combine the salsa ingredients: In a large bowl or serving bowl, add the diced roma tomatoes, diced avocados, finely diced red bell pepper, finely diced sweet onion, thawed corn, and the three types of beans (navy, pinto, and black beans). Mix all the ingredients together gently until well combined.
 - Prepare the honey lime dressing: In a smaller bowl, whisk together the olive oil, honey, freshly squeezed lime juice, kosher salt, and black pepper until the dressing is smooth and emulsified.
 - Dress the salsa: Pour the honey lime dressing over the bean salsa mixture. Toss everything thoroughly to ensure the dressing coats all components evenly.
 - Chill or serve: The salsa can be served immediately as a fresh dip or side dish. For enhanced flavor and a chilled experience, refrigerate the salsa for 1-2 hours before serving. Stir well before serving to redistribute any pooled liquid. The lime juice helps prevent the avocados from browning quickly.
