Sweet Potatoes
- 3 cups cubed sweet potatoes

Beef Mixture
- 1 pound lean ground beef
- 1 tablespoon taco seasoning
Toppings and Extras
- 2 cups cottage cheese
- 1 large avocado, diced
- 4 tablespoons hot honey
- 4 cups roughly chopped kale (optional)
- 1 tablespoon olive oil (optional, for kale)
Instructions
- Roast Sweet Potatoes: Preheat your oven to 400°F. In a large bowl, toss the cubed sweet potatoes with 1 tablespoon of olive oil, ground cinnamon, salt, and black pepper until evenly coated. Spread them in a single layer on a baking sheet. Roast in the oven for 18 to 22 minutes or until fork-tender, stirring halfway through for even cooking.
- Cook Ground Beef: While the sweet potatoes roast, heat a frying pan over medium-high heat. Add the lean ground beef and start browning it. Once the beef begins to brown, sprinkle in 1 tablespoon of taco seasoning, stirring well to combine. Continue cooking until the beef is thoroughly cooked and no longer pink, about 6-8 minutes total.
- Prepare Kale (Optional): If using kale, massage the chopped kale with 1 tablespoon olive oil for about 30 seconds to soften and enhance flavor.
- Assemble the Bowls: Divide the cooked ground beef and roasted sweet potatoes evenly among four bowls. Add ½ cup cottage cheese and ¼ of the diced avocado to each bowl. Drizzle each bowl with 1 tablespoon of hot honey to add a perfect balance of sweetness and heat. Add the massaged kale on top if using.

- You can adjust the amount of hot honey based on your spice preference.
- For a dairy-free option, substitute cottage cheese with a plant-based alternative.
- To make it more filling, add cooked quinoa or brown rice at the bottom of the bowls.

- Mashed kale is optional but adds a nice nutritional boost and texture contrast.
