  • ¾ cup ricotta cheese (about 3 tablespoons per pizza)
  • Sprinkle of oregano
  • Garlic powder (for sprinkling)
  • Dash of crushed red pepper
  • 3 tablespoons Mike’s Hot Honey (approximately 2 teaspoons per pizza)

Instructions

  1. Make the dough: In a stand mixer with dough hook or a large bowl, combine gluten-free baking flour, baking powder, salt, and garlic powder. Mix in Greek yogurt until a dough forms. Adjust dough consistency by adding more flour if too sticky or more yogurt if too dry.
  2. Knead the dough: On a well-floured surface, knead the dough by hand until smooth and form into one large ball.
  3. Divide the dough: Using a knife or dough cutter, divide the dough into four equal sections.
  4. Roll out the dough: Working with one section at a time, roll out each piece on a floured surface with a floured rolling pin to about 4-5 inches diameter, similar to a small tortilla.
  5. Prepare for cooking: Transfer the rolled dough onto a small piece of parchment paper. Brush the top of the dough with egg white wash for a golden finish.

  12. Finish cooking (Oven): Return pizza to oven without parchment for 5-8 minutes until cheese is melted and bubbly.
