Crust Ingredients
- 1 cup Gluten Free 1:1 Baking Flour
- ¾ cup plain Greek yogurt (fat free recommended)
- 1 ½ teaspoon baking powder
- ¼ teaspoon salt
- Sprinkle of garlic powder
- 1 egg white (for egg wash)
Toppings
- ½ – ¾ cup Tomato Sauce or Pizza Sauce
- ¾ cup mozzarella cheese (about 3 tablespoons per pizza)
- ¾ cup ricotta cheese (about 3 tablespoons per pizza)
- Sprinkle of oregano
- Garlic powder (for sprinkling)
- Dash of crushed red pepper
- 3 tablespoons Mike’s Hot Honey (approximately 2 teaspoons per pizza)
Instructions
- Make the dough: In a stand mixer with dough hook or a large bowl, combine gluten-free baking flour, baking powder, salt, and garlic powder. Mix in Greek yogurt until a dough forms. Adjust dough consistency by adding more flour if too sticky or more yogurt if too dry.
- Knead the dough: On a well-floured surface, knead the dough by hand until smooth and form into one large ball.
- Divide the dough: Using a knife or dough cutter, divide the dough into four equal sections.
- Roll out the dough: Working with one section at a time, roll out each piece on a floured surface with a floured rolling pin to about 4-5 inches diameter, similar to a small tortilla.
- Prepare for cooking: Transfer the rolled dough onto a small piece of parchment paper. Brush the top of the dough with egg white wash for a golden finish.
- Cook the crust (Air Fryer method): Preheat your air fryer to 400°F. Cook the dough for 5-8 minutes or until the crust begins to turn golden.
- Add toppings (Air Fryer): Remove crust from the air fryer, spread tomato sauce, add dollops of ricotta cheese, and sprinkle mozzarella cheese evenly over.
- Finish cooking (Air Fryer): Place the pizza back in air fryer without the parchment paper and cook another 5-8 minutes until cheese is melted and bubbly.
- Season and drizzle (Air Fryer): Sprinkle with garlic powder, oregano, and crushed red pepper. Drizzle with Mike’s Hot Honey before serving.
- Cook the crust (Oven method): Preheat oven to 400°F. Place parchment with dough onto a sheet pan or pizza stone and bake 8-10 minutes until crust starts to become golden.
- Add toppings (Oven): Remove crust, layer with tomato sauce, ricotta cheese, and mozzarella cheese.
- Finish cooking (Oven): Return pizza to oven without parchment for 5-8 minutes until cheese is melted and bubbly.
- Season and drizzle (Oven): Sprinkle with garlic powder, oregano, and crushed red pepper. Drizzle Mike’s Hot Honey right before serving.
Notes
- Adjust flour and yogurt amounts slightly to achieve a dough that is soft but not sticky.
- Using egg white brush helps achieve a nicely browned and shiny crust.
- If you prefer less cheese, you can reduce mozzarella or omit it in favor of ricotta’s creaminess.
