Instructions
- Marinate the Chicken: In a large bowl, mix together 1 tablespoon olive oil, salt, pepper, garlic powder, onion powder, and smoked paprika. Toss the chicken breasts in the marinade to ensure they’re well coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
- Cook the Chicken: Heat a large skillet over medium-high heat and add a tablespoon of olive oil. Sear the marinated chicken breasts for 6-7 minutes per side, until golden brown and fully cooked (internal temp of 165°F/74°C). Remove the chicken and set aside.
- Prepare the Peaches and Jalapenos: Peel and dice the peaches into small pieces. Seed and finely chop the jalapenos, adjusting the amount to suit your spice preference.
- Make the Jalapeno Peach Sauce: In the same skillet, add another tablespoon of olive oil over medium heat. Sauté the red onion and garlic for 2-3 minutes until softened. Add the peaches, jalapenos, honey, apple cider vinegar, soy sauce, and lime juice. Stir to combine and cook for 5-7 minutes, until the peaches soften and the sauce thickens slightly. Season with salt and pepper to taste.
- Combine Chicken and Sauce: Nestle the cooked chicken breasts into the sauce in the skillet. Spoon some sauce over the chicken to coat. Reduce heat to low and let everything simmer together for 5-10 minutes, allowing the flavors to meld.
- Serve: Plate the chicken and top generously with the jalapeno peach sauce. Garnish with fresh cilantro, parsley, or sliced green onions for added color and flavor. Serve alongside rice, quinoa, or green salad, if desired.
