Chicken Marinade
- 1 1/2 tsp cumin
- 1 1/2 tsp smoked paprika
- 1 tbsp chili powder
- 1/2 tsp dried oregano
- 1/4 tsp black pepper
- 1 tsp salt
- 2 cloves garlic, minced
- 1 tbsp lime juice
- 2 tbsp olive oil
- 1 1/2 lbs boneless skinless chicken breasts, sliced into thin cutlets

Instructions
- Slice the chicken: Begin by slicing the boneless skinless chicken breasts into thin cutlets. Place the sliced chicken into a large mixing bowl to prepare for marinating.
- Prepare the marinade: Add cumin, smoked paprika, chili powder, dried oregano, black pepper, salt, minced garlic, lime juice, and olive oil to the bowl with the chicken. Mix well to evenly coat all the pieces.
- Marinate the chicken: Cover the bowl and refrigerate the chicken to marinate for 2 to 3 hours, allowing the flavors to infuse deeply into the meat.
- Grill the chicken: Rub a cast iron skillet lightly with olive oil to coat it. Heat the skillet over medium-high heat. Grill the marinated chicken cutlets on each side for 3 to 4 minutes until fully cooked and slightly charred.
- Dice the chicken: Remove the chicken from the skillet and cut it into bite-sized cubes, perfect for filling tacos.
- Warm the tortillas: Warm tortillas in the skillet or lightly char them directly over a gas flame using tongs for extra smoky flavor.
- Assemble the tacos: Load the warmed tortillas with the cubed grilled chicken. Top with your favorite garnishes such as pico de gallo, guacamole, red onion, cilantro, sour cream, and a squeeze of fresh lime juice.

- For best flavor, marinate the chicken for a full 3 hours.
- Use corn tortillas for a traditional street taco experience or flour tortillas for a softer option.
- If you don’t have a cast iron skillet, any heavy-bottomed skillet will work.
- Char the tortillas carefully to avoid burning but add a nice smoky aroma.
