Ingredients
Egg Yolk Mixture:
- 3 large eggs
- 3 ounces cream cheese, softened
- 1 dash salt
Egg White Mixture:
- 3 large eggs (separated)
- 1 pinch cream of tartar (preferred but not required)
Instructions
- Preheat Oven: Preheat the oven to 300°F and line a baking pan with parchment paper or a silicone liner.
- Prepare Yolk Mixture: In a bowl, mix egg yolks, softened cream cheese, and salt until well blended using an electric mixer.
- Whip Egg Whites: In a separate bowl, whip the egg whites with cream of tartar (if using) until very stiff.
- Combine Mixtures: Gently fold the egg yolk mixture into the whipped egg whites using a spatula, being careful not to deflate the whites.
- Bake: Spoon 6 mounds of the mixture onto the prepared pan, flatten slightly, and bake for 25-30 minutes until set.
- Cool and Store: Cool the rolls on the pan for a few minutes, then transfer to a rack. Store in a zipper bag to keep them soft.
Notes
- For best results, beat the egg whites until very stiff for a bread-like texture.
- Do not double the batch to maintain proper consistency.
- Spread butter on each roll to maintain the egg-fat ratio.
- For thicker buns, reduce cream cheese to 2.5 ounces and add ¼ cup almond flour to the yolk mixture.
