Ingredients
Cookie Dough
- ¾ cup unsalted butter, softened
- ⅔ cup sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 tablespoons key lime juice
- 2 ¼ cups all-purpose flour
- ¼ teaspoon salt
Key Lime Glaze
- 1 cup powdered sugar
- 2 tablespoons key lime juice
- ½ teaspoon vanilla extract
Instructions
- Cream Butter and Sugar: In a bowl, cream together the softened butter and sugar until light and fluffy to create the base of the cookie dough.
- Add Wet Ingredients: Beat in the egg, vanilla extract, and key lime juice until fully incorporated, ensuring a smooth and fragrant dough.
- Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour and salt.
- Combine Dough: Gradually add the flour mixture to the butter mixture, mixing until just combined to form the cookie dough.
- Shape Dough: Divide the dough into two equal portions. Roll each into a log about 8-9 inches long and 2 inches in diameter for easy slicing later.
- Chill Dough: Wrap each dough log tightly in plastic wrap and chill in the refrigerator for at least 2 hours to firm up for slicing.
- Preheat Oven: When ready to bake, preheat the oven to 350°F (175°C).
- Slice Cookies: Remove one dough log from the refrigerator, unwrap, and slice into 12 even cookies approx. ½ inch thick.
- Prepare Baking Sheet: Arrange the cookies on a baking sheet lined with parchment paper or a silicone baking mat, spacing about an inch apart.
- Bake Cookies: Bake for 10-12 minutes or until the cookies are set and the edges turn lightly golden. Avoid overbaking to maintain their tender texture.
- Cool Slightly: Remove the baking sheet from the oven and let cookies cool on it for 5 minutes to firm up before transferring.
- Cool Completely: Transfer the cookies to a wire rack and allow them to cool fully to room temperature.
- Prepare Glaze: While cookies cool, whisk together powdered sugar, key lime juice, and vanilla extract until smooth and pourable.
- Glaze Cookies: Dip the tops of each cooled cookie into the glaze carefully, then place them back on the wire rack to set.
- Store and Serve: Let the glaze dry completely before storing cookies in an airtight container until ready to serve.
