Ingredients

For the Lavender Lemonade Mojito

For the Lavender Simple Syrup

  • 1 cup granulated sugar
  • 1 cup water
  • ¼ cup dried lavender

Instructions

  1. Prepare the Lavender Simple Syrup: In a medium saucepan, combine 1 cup sugar, 1 cup water, and ¼ cup dried lavender. Stir the mixture and bring it to a boil over medium-high heat.
  2. Simmer and Steep the Syrup: Once boiling, reduce heat to a simmer and let it simmer gently for about 10 minutes, allowing the syrup to thicken slightly and the lavender flavor to infuse fully.
  3. Strain and Chill the Syrup: Turn off the heat, cover the saucepan, and let the syrup steep for about an hour. Afterwards, push the syrup through a mesh sieve to strain out the lavender buds and transfer the syrup into an airtight container. Refrigerate until chilled.
  4. Muddle Mint and Lemon Juice: In a pitcher, muddle the mint leaves with 1 cup freshly squeezed lemon juice until the flavors are well combined and aromatic.
  5. Add Remaining Ingredients: Pour in 2 cups of water, 1 cup light rum, and ¾ cup of the chilled lavender simple syrup into the pitcher. Stir the mixture thoroughly to combine all ingredients.
