Ingredients
For the Lavender Lemonade Mojito
- 1 cup freshly squeezed lemon juice (from 4-7 lemons)
- 1 small bunch mint leaves
- 2 cups water
- 1 cup light rum
- ¾ cup chilled lavender simple syrup
For the Lavender Simple Syrup
- 1 cup granulated sugar
- 1 cup water
- ¼ cup dried lavender
Instructions
- Prepare the Lavender Simple Syrup: In a medium saucepan, combine 1 cup sugar, 1 cup water, and ¼ cup dried lavender. Stir the mixture and bring it to a boil over medium-high heat.
- Simmer and Steep the Syrup: Once boiling, reduce heat to a simmer and let it simmer gently for about 10 minutes, allowing the syrup to thicken slightly and the lavender flavor to infuse fully.
- Strain and Chill the Syrup: Turn off the heat, cover the saucepan, and let the syrup steep for about an hour. Afterwards, push the syrup through a mesh sieve to strain out the lavender buds and transfer the syrup into an airtight container. Refrigerate until chilled.
- Muddle Mint and Lemon Juice: In a pitcher, muddle the mint leaves with 1 cup freshly squeezed lemon juice until the flavors are well combined and aromatic.
- Add Remaining Ingredients: Pour in 2 cups of water, 1 cup light rum, and ¾ cup of the chilled lavender simple syrup into the pitcher. Stir the mixture thoroughly to combine all ingredients.
- Serve: Fill glasses with ice and pour the prepared Lavender Lemonade Mojito over the ice. Garnish with additional mint if desired and serve immediately.
Notes
- Adjust the sweetness by varying the amount of lavender simple syrup to taste.
- Use fresh mint for best aroma and flavor.
- Chill the simple syrup beforehand to keep the cocktail cold without diluting it.
- For a non-alcoholic version, omit the rum and add sparkling water instead.
