Ingredients
Galette Crust
- 1.5 cups flour
- 1 tsp sugar
- Pinch salt
- 8 Tbsp cold butter
- 3 Tbsp ice water
Lemon Blueberry Filling
- 1/2 lb. blueberries
- 1 Tbsp sugar
- 1 tsp cornstarch
- 1 fresh lemon
Cream Cheese Filling
- 4 oz cream cheese, room temperature
- 2 tsp sugar
- 1 large egg, separated
Instructions
- Galette Crust: Combine flour, sugar, and salt. Cut in cold butter until pea-sized pieces form. Add ice water, form a dough, refrigerate.
- Lemon Blueberry Filling: Combine blueberries, sugar, cornstarch, lemon zest and juice.
- Cream Cheese Filling: Mix cream cheese, sugar, egg yolk, and lemon juice.
- Roll out dough, spread cream cheese mixture, top with blueberries. Fold edges of dough over the filling.
- Brush with egg white, bake at 400ºF for 30 minutes.
- Let cool, slice, and serve.

- This recipe uses a basic pie dough, but you can use your preferred pie crust recipe.
