Instructions
- Preheat and Prepare: Preheat the oven to 400°F (204°C). Lightly grease a 9×13″ baking dish and set it aside to get ready for the cod fillets.
- Make Lemon Butter Sauce: In a small bowl, melt the butter in the microwave in 15-second increments until fully liquid (about 1 minute). Whisk in the minced garlic, juice and zest of the lemons, Italian seasoning, capers, and chopped fresh parsley to create a flavorful sauce.
- Prepare the Cod: Pat the cod fillets dry with a paper towel to help the sauce adhere. Place each fillet in the greased baking dish, spacing them evenly with room between each piece.
- Coat the Fish: Pour the lemon butter sauce evenly over the cod fillets. Use a spoon to ensure each fillet is thoroughly coated with the sauce, distributing garlic and capers evenly.
- Bake the Cod: Bake in the preheated oven for 15-20 minutes, or until the cod is cooked through, opaque, and flakes easily with a fork. To ensure doneness, the internal temperature should reach 145°F (63°C).
