- 1 lb. Gnocchi (shelf stable or refrigerated)
- 1 cup Fresh Baby Spinach
- 4 ounces Parmesan Cheese
- 4 to 5 Fresh Basil Leaves, cut into ribbons
- 1 teaspoon Italian Seasoning (optional)
Instructions
- Sauté onions and garlic: Heat a large skillet over medium heat. Add the butter and diced onion. Cook, stirring frequently, for 6-7 minutes until the onions are soft and translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.
- Add liquids and seasonings: Pour in the chicken broth and heavy cream, then add the sundried tomatoes, salt, pepper, red pepper flakes, and Italian seasoning if using. Stir the ingredients together to blend the flavors.
- Simmer gnocchi in sauce: Add the gnocchi directly to the skillet. Let them simmer in the sauce for about 5 minutes, allowing them to cook fully and absorb the flavors.
- Incorporate spinach and cheese: Stir in the fresh baby spinach (torn or chopped into smaller pieces) and Parmesan cheese. Mix thoroughly so the spinach wilts slightly and the cheese melts into the sauce. Add most of the fresh basil ribbons now, reserving some for garnish.
- Serve: Plate the gnocchi and sauce, then generously top with the remaining fresh basil ribbons and sprinkle extra Parmesan cheese. Serve immediately while warm.
Notes
- Use shelf-stable or fresh refrigerated gnocchi rather than frozen, as frozen gnocchi releases excess moisture and affects texture.
- The gnocchi does not need to be pre-cooked before adding to the sauce; they will cook perfectly while simmering.
- For a lighter option, substitute half-and-half in place of heavy cream, though the sauce will be slightly thinner.
