Ingredients
Meatloaf Patties
- 1 lb. lean ground beef
 - 1/2 cup chopped onion (about ½ a small onion)
 - 1 large egg
 - 1/2 cup saltine cracker crumbs (about 12 crackers)
 - 1 teaspoon dried oregano
 - 1 teaspoon garlic powder
 - 1/3 cup ketchup
 - 1 teaspoon kosher salt
 - 1/4 teaspoon black pepper
 
Topping
- 1/3 cup ketchup
 - 3 Tablespoons light brown sugar
 
Instructions
- Mix Meatloaf Ingredients: In a large bowl, combine the ground beef, chopped onion, egg, saltine cracker crumbs, oregano, garlic powder, ketchup, kosher salt, and black pepper. Mix everything together thoroughly by hand until well combined. Then shape the mixture into 4-5 evenly sized individual patties.
 - Prepare the Topping: In a small bowl, mix together 1/3 cup of ketchup with 3 tablespoons of light brown sugar until smooth and well combined. Set aside for topping the patties during cooking.
 - Cook the Patties: Heat a large cast iron skillet over medium heat and add a small amount of oil. Once the oil is hot, carefully place the meatloaf patties into the skillet. Cook for about 5-7 minutes on one side, until nicely browned.
 - Flip and Glaze: Flip each patty over, then immediately spoon the brown sugar ketchup topping over the patties. Continue cooking for another 5 minutes on the other side, occasionally basting with more glaze if desired, until the patties are cooked through and no longer pink in the center.
 - Rest and Serve: Remove the cooked patties from the skillet and let them rest for 5 minutes. This allows the juices to redistribute, ensuring juicy and flavorful patties. Serve immediately with mashed potatoes and green beans or place them on hamburger buns for a hearty meatloaf sandwich.
