Ingredients
Salad
- 1.5 cups cooked boneless skinless chicken breast, shredded or diced
- 1/4 cup reduced fat feta cheese, crumbled

Dressing
- 1/4 cup nonfat Greek yogurt
- 3 tbsp reduced fat mayonnaise
- 1 tbsp fresh dill, chopped
- 1 tbsp fresh parsley, chopped
- 1/2 tbsp lemon juice
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 tsp celery seed
Instructions
- Make dressing. In a medium bowl, combine the nonfat Greek yogurt, reduced fat mayonnaise, fresh dill, fresh parsley, lemon juice, onion powder, salt, pepper, and celery seeds. Whisk until smooth and well incorporated.
- Add chicken and vegetables. To the prepared dressing, add the cooked chicken breast, reduced fat feta cheese, diced celery, Persian cucumbers, roasted red peppers, black olives, and red onions. Stir gently to combine all ingredients evenly without breaking down the vegetables or chicken.
- Taste and adjust seasoning. Sample the salad and add additional salt, pepper, or lemon juice if necessary to balance the flavors according to your preference.
- Chill before serving. For best flavor, cover the salad and refrigerate for at least one hour to allow the dressing to meld with the chicken and vegetables.
- Serve and enjoy. After chilling, serve the Mediterranean Chicken Salad chilled as a light meal, sandwich filling, or side dish.
