Ingredients
Wet Ingredients
- 1 ripe banana (mashed)
- ¼ cup unsweetened applesauce
- 1 egg
- ¼ cup full-fat coconut milk (or any milk)
- 1 teaspoon vanilla extract
- 1 tablespoon melted coconut oil or avocado oil
Dry Ingredients
- 2 tablespoons unflavored collagen peptides (optional)
- 1 cup oat flour
- 1 teaspoon baking powder
- ½ teaspoon cinnamon
- Pinch of sea salt
Instructions
- Preheat Waffle Maker: Preheat your mini waffle maker and lightly grease it with oil or non-stick spray to ensure the waffles do not stick.
- Mix Wet Ingredients: In a medium bowl, combine the mashed banana, unsweetened applesauce, egg, full-fat coconut milk, vanilla extract, and melted coconut or avocado oil. Add the collagen peptides if using, and mix thoroughly until the batter is smooth.
- Add Dry Ingredients: Stir the oat flour, baking powder, cinnamon, and a pinch of sea salt into the wet ingredients. Mix until just combined. Let the batter rest for 5 to 10 minutes to allow it to thicken slightly.
- Cook Waffles: Spoon approximately 3 tablespoons of batter (about ¼ cup) per mini waffle onto the preheated waffle maker. Cook each waffle for 3 to 5 minutes or until they turn golden brown and are cooked through.
- Cool and Serve: Allow the waffles to cool slightly before serving. Cut them into strips that are easy for toddlers to hold. Serve plain or with a swipe of nut butter or mashed berries as preferred.
- Storage: Store leftover waffles in an airtight container in the refrigerator for up to 4 days or freeze for up to 2 months. To reheat, thaw overnight in the fridge and warm in a toaster for best texture. These waffles make great snacks or breakfasts anytime.
