- 3 ½ to 4 Pounds Chuck Roast
- ½ Cup Orange Juice
- ½ Cup Low Sodium Soy Sauce
- 3 Tablespoons White Miso Paste
- 3 Tablespoons Ginger Paste, or 3 inch knob, peeled & grated
- 2 Tablespoons Honey, or maple syrup or brown sugar
- 4 Cloves Garlic, mashed
- 1 Teaspoon Ground Black Pepper
- 1 Teaspoon Red Chili Flakes
Instructions
- Preheat Oven: Preheat your oven to 325°F to prepare for slow roasting the chuck roast.
- Make Marinade: In a medium bowl, whisk together orange juice, low sodium soy sauce, white miso paste, ginger paste (or freshly grated ginger), honey (or maple syrup or brown sugar), mashed garlic, black pepper, and red chili flakes until the miso is fully dissolved and the mixture is smooth.
- Prepare Roast: Pat the chuck roast dry with paper towels, then place it into a Dutch oven or heavy-bottomed oven-safe pot with a lid.
- Coat Meat: Pour the marinade over the roast and use hands or tongs to flip and coat the meat thoroughly with the marinade.
- Slow Cook Roast: Cover the pot with the lid and transfer it to the oven. Cook undisturbed for 3½ to 4 hours until the meat is fall-apart tender.
- Test Tenderness: At 3½ hours, remove the pot and test the meat with two forks; if it shreds easily, proceed, otherwise cook for an additional 30 minutes.
- Shred Meat: Once tender, shred the meat directly in the pot with two forks, mixing it well with the flavorful juices.
- Optional Crisping: For crispy edges, switch oven to broil on high, return the uncovered pot to the oven, and broil for 3 to 4 minutes. Remove carefully and serve hot.
Notes
- Substitute honey with maple syrup or brown sugar for a different sweetness profile.
- Use a heavy-bottomed Dutch oven for even heat distribution and best results in slow roasting.
- Broiling at the end crisps the edges without drying out the meat if monitored carefully.
- Ensure the chuck roast is fully coated in marinade to maximize flavor infusion.
- Leftovers can be refrigerated for up to 3 days or frozen for longer storage.
