- 1/4 cup + 2 tablespoons mini chocolate chips
Wet Ingredients
- 1 cup creamy peanut butter (such as Skippy)
- 1/2 cup honey
- 1 teaspoon vanilla extract
Instructions
- Combine Ingredients: In a very large bowl, combine the quick oats, creamy peanut butter, honey, vanilla extract, fine sea salt, miniature M&M’s, and mini chocolate chips. Use a hand mixer on low speed to beat the ingredients until a thick mixture forms. Alternatively, you can use a stand mixer for this step.
- Portion and Roll: Using a 1-tablespoon measuring spoon or a 1-1/2 tablespoon cookie scoop, portion out the mixture. Tightly roll each portion into a ball shape using your hands for uniform energy balls.
- Chill: Place the rolled balls on a parchment paper-lined plate or tray to prevent sticking. Refrigerate for about 30 minutes to an hour until they are firm and set.
- Store: Once firm, transfer the Monster Energy Balls to an airtight container. Keep refrigerated for freshness and easy snacking.
Notes
- You can substitute the miniature M&M’s and mini chocolate chips with chopped nuts or dried fruit for a variation.
- If you don’t have a hand or stand mixer, mix thoroughly with a sturdy spoon, but it may require more effort.
- To keep the balls uniform in size and shape, use a cookie scoop and roll tightly to prevent crumbling.
