Ingredients
Base
- 2 ¼ cups powdered sugar
- 2 cups graham cracker crumbs
- 1 ¼ cups creamy peanut butter
- 1 cup unsalted butter, melted
- ½ teaspoon vanilla extract
Topping
- 1 ½ cups semi-sweet chocolate chips
- ½ cup creamy peanut butter
Instructions
- Prepare the baking dish: Line a 9×13-inch baking dish with foil and spray it with cooking spray to ensure easy removal of the bars later. Set aside.
- Make the peanut butter base: In a large bowl, combine the powdered sugar, graham cracker crumbs, 1 ¼ cups creamy peanut butter, melted butter, and vanilla extract. Stir until the mixture is smooth and evenly mixed.
- Spread the base: Evenly spread the peanut butter mixture onto the bottom of the prepared baking dish. Set aside while you prepare the chocolate topping.
- Prepare the chocolate topping: In a medium-sized microwave-safe bowl, combine the chocolate chips and remaining ½ cup creamy peanut butter. Microwave for 30 seconds, stir, then microwave for another 30 seconds. Continue microwaving in 15-second intervals as needed, stirring between each, until the chocolate mixture is fully melted and smooth.
- Add the topping: Pour and spread the melted chocolate and peanut butter mixture evenly over the peanut butter base in the baking dish.
- Chill to set: Place the baking dish in the refrigerator and chill for at least 6 hours, or until the bars are firm and set.
- Serve: Use the foil to lift the bars out of the dish, cut into 20 squares, and serve chilled for best results.
Notes
- These bars are best served chilled to prevent the topping from melting.
- You can cut the bars into larger squares if preferred.
- Feel free to use semi-sweet, milk, or dark chocolate for the topping according to your taste.
- Crunchy peanut butter can substitute creamy peanut butter for added texture.
- These bars can be frozen for longer storage.
- Ensure to refrigerate the bars for about 6 hours for them to fully set and chill properly.
