Ingredients
Meat & Vegetables
- 1 lb ground beef
- 3 garlic cloves, minced
- ½ yellow onion, chopped
- 1 c frozen spinach
Seasonings
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp dried basil
- ½ tsp dried oregano
- 1 tsp kosher salt, plus more to taste
- Fresh ground pepper, to taste
Liquids & Tomatoes
- 14 oz can crushed tomatoes
- 32 oz chicken broth, plus more if needed
- 1 c water
- 2 tsp tomato paste
- ¼ c cream
Pasta & Cheese
- 6 oz lasagna noodles, broken into small pieces
- Ricotta cheese
- 4 oz mozzarella cheese, sliced
- Optional: Parmesan cheese, for topping
Instructions
- Brown the Beef: In a large pot over medium heat, add the ground beef. Cook, breaking it up with a spoon, until browned. Drain off the excess grease to keep the soup from becoming greasy.
- Sauté Aromatics & Season: Add the minced garlic, chopped onion, garlic powder, onion powder, dried basil, dried oregano, kosher salt, and black pepper to the pot. Cook for about 5 minutes on medium-low heat, stirring occasionally, until the onions have softened and the spices are fragrant.
- Add Tomato & Liquids: Stir in the crushed tomatoes, chicken broth, water, and tomato paste. Mix well to combine all the ingredients evenly in the pot.
- Incorporate Noodles: Add the broken lasagna noodles to the pot, ensuring they are submerged in the broth. Bring the mixture to a boil, then reduce the heat to low. Cover and let the soup simmer for about 10 minutes, until the noodles are just tender.
- Add Spinach & Cream: Stir in the frozen spinach and cream. Allow the soup to simmer, uncovered, for an additional 5 minutes, letting the flavors meld and the spinach to heat through.
- Serve with Cheese: For the ultimate lasagna experience, place a slice of mozzarella cheese at the bottom of each serving bowl. Ladle hot soup over the cheese, then top each bowl with a generous dollop of ricotta cheese and a sprinkle of parmesan, if desired. Serve immediately.
Notes
- This soup is meant to be thicker, similar to a stew. If you prefer a thinner soup, simply add extra chicken broth at the end until your desired consistency is reached.
- Placing a slice of mozzarella cheese at the bottom of the bowl provides a melty, lasagna-like effect—don’t skip this for an authentic lasagna soup experience.
- You can swap ground beef for ground turkey for a lighter version.
- Use no-boil lasagna noodles if preferred; adjust simmer time as needed.
